I don’t know about you, but I have trouble finding a salad dressing that I like that is low in fat and calories, and dare I dream, even remotely healthy! I came up with this healthy homemade dressing made with fresh ingredients and I use it ALL the time!
I’ve tried many store-bought salad dressing options in my search for a healthy topping for my daily salads. If they are low fat, they taste a little odd, and too sweet. If they are calorie free, they taste just awful!
Maybe I just haven’t tried the right one, so feel free to send me your suggestions and some brands you like in the comments below!
However, for me, the struggle is real. Especially, since one meal a day is a giant, serving bowl-sized salad! And I like lots of dressing, too, so that can get mighty pricey in the calorie and fat department!
Enter the homemade dressing!
Whoever came up with this is beyond brilliant, in my opinion. I can make a dressing out of vegetables, with no oil and since it’s all veggies, it’s all healthy and good for me! What?!?
And so my quest for the salad dressing of my dreams began. I tried several recipes, tweaked some to be perfect for me, and invented a lot more!
Nowadays, I don’t even write them down, unless they are just out of this world amazing.
I make salad dressing out of vegetables I’m chopping for my salad!
I usually just throw some veggies and salad ingredients into a bullet blender with some sort of liquid, blend it up, and arrange it artfully over my salad (so I can post it on Instagram, follow me below) and dive in!
My dressings are a little different each time, depending on what vegetables I have on hand or that I am hungry for. Later, I will post some others here that I love and I think you will too!
There is one dressing that I actually wrote down in my ever-present, tiny leather-bound journal that I use to jot down recipes and food tips in, lest I ever forget. This recipe even got shared with my family, to rave reviews. Behold…
avocado cilantro lime dressing
(makes 2 servings)
- 1 ripe avocado, peeled, pit removed
- 1 lime, peeled or juice of one lime
- ½ cup sweet bell peppers
- 1 jalepeno, seeded (if you like it spicy), optional
- 2 T. onion
- 1 small clove garlic
- ¼ cup cilantro (more or less, depending on your taste)
- 1 T. nutritional yeast (or pinch of salt instead)
Place all ingredients in a small blender or food processor and blend until smooth.
My favorite salad to put this creamy dressing on is this combination:
- Mixed greens
- Black beans
- Frozen, thawed corn kernels
- Red onion
- Crushed tortilla chips
What are some things that keep you from eating healthfully? I had lots of excuses for a long time, and I’m working to overcome them even today. I’d love to help you and I’ve come up with some ideas and tips that have worked for me. And also these may help. Sometimes being open with our struggles can be really freeing and can possibly help others as well.
