Have you ever wanted to eat a whole batch of cookies by yourself, but that little voice in your head was screaming that your hips would surely be wearing another few pounds in a few minutes if you ate more than one or two […]
This is a fun and colorful fruit presentation that is perfect for a late-summer brunch! I have a lot of sisters. Six of them, in fact. Seven, if you count my sister-in-law, Sydney, which I do; eight, if you count my mom, which I […]
When you blend frozen bananas you get a cold and creamy concoction called nicecream — ‘nana ice cream! It’s my most favorite dessert. There are so many different ways to change the flavor that you never get bored! You can have a different guilt-free bowl of frozen yumminess every night and never have the same thing twice!
However, I get cold every time I eat frozen desserts!
I mean shivering under a blanket and my rings don’t fit anymore cold. And I hate to be cold. So why do I insist on putting myself through that? Why am I, even now as I type, sitting in front of a bowl of delicious green nice cream with a cup of coffee beside me so I can try and maintain some level of body temperature??
Because every shiver and every trip out into the summer heat to thaw out, every minute spent under an electric blanket, is completely and totally worth the amazingness that is the healthy, banana-based, guilt-free dessert they call nice cream.
Here is a new addition to my growing list of recipes and variations on this wonderful treat: I call it Banana Split Nice Cream.
Here’s how I made it:
banana split nice cream
(serves 1 if you’re me, 2 if you’re most other people)
- 3 bananas, frozen, cut/broken into chunks
- 1 cup strawberries, frozen
- 1 T. cacao nibs (or you could use chocolate chips)
- ¼ cup shredded, unsweetened coconut, optional
- 1 T. chia seeds, optional but super healthy
- 2 dates, pitted and chopped (or your favorite sweetener, like stevia/agave/maple syrup, etc)
- 1 t. vanilla
- 2-3 T. almond milk or water
Place everything into a food processor or high-speed blender and blend away!! If you have trouble blending, you can let the frozen bananas thaw for 15 minutes or so and cut them into smaller pieces.
Spoon it into a bowl, grab a blanket and/or a hot drink, and enjoy! :)
Just imagine it…sitting down for breakfast or for dessert in front of a giant bowl of cold, creamy, chocolaty goodness and it’s all good for you, guilt-free, healthy, and vegan. And it’s CHOCOLATE, people! The two main ingredients in this […]
This cold and frosty blend of watermelon and cantaloupe is perfect for a quick breakfast or as a sweet treat. I can also picture it as a cocktail base enjoyed on a warm evening outside with good friends. I love to have it for […]
