I have to admit something.
As much as I want to and as hard as I try, I don’t like kale.
It’s not the flavor. I like the taste of all sorts of greens and kale is no different.
It’s the texture. It is so tough and hard to chew. No matter how finely I chop it, it seems to take hours to eat and I’m bored to death of my salad before it’s even half gone. Can I get a witness??

I’ve been reading lots of books and articles lately, in pursuit of optimum health and to see how I can improve my diet even more.
One of the things that practically everyone agrees is a good place to start, is to eliminate gluten and most grains from your diet. This is because a component of modern wheat, called gliadin, mimics your own hormones, leading your immune system to attack you, thinking it’s defending you, and causing all sorts of problems, from allergies to gastrointestinal upset.
Because it can be inflammatory to many people and not the best for many others, I’ve decided to choose other options in my recipes.
